that these additions are niado to prevent the growth of mioro-organisms upon the

this claim has no foundation in fact. The authors conclude that sulphur and talc are
employed primarily to bleach the grain, and to secure uniformity of appearance which

Livcrseege and llawley (Journal of the Society of Chemical idustry, 1015, 203)
report upon seventy three (73) samples of English pearl barley, and ooucluda tliat there
ivpaan to be an increase in the uae of minora! facing. The insoluble adi foBnd for
aixtgr aerai (67) samples is b^w 0-93 par oent; while six lamploB' show amounts
varjrisgbetwaenO-aS and 0-88 per cent The authors pmnt out that £ffy (M) saaqiles
oontain lass than 0<<I6 per oent inaolnbia nak, and that <mly one of these oontained
mam than 1-10 p«r oent of total ash. They oonaider that 0-10 per oent of insoluUa ash
ia a TCijr reasonable allowance, and tint aamples containing a larger proportion than
tUs should be regarded as adulterated with mineral facing. The total ash should not
exceed 110 per cent. Talc (soapstono) is tlie mineral substonco generally employed
in facing of this sort; and being absolutely indigestible and tot^ly devoid of food
valuer must be regarded as an aduhetant, quite poasi^ harmful to ImMl

Bioa starch is another article employed in the facing of pearl barley. It cannot
ba lUffurded as harmful to health, but tmdoubtedly must be regarded as an adulterant
under Section 3, h, of the Act, being used " to conceal damage, or ttf make the article
appear better or of greater value than it really is." Even the use of barley starch in
facing pearl barley must be regarded as adulteration, since the object is mainly to
flouaeal inlwierity.

Sixty-four (64) per cent of the samplee herein reported as having been sold under
the term Pot BwtUy, are found to yield more than 1-10 per oent of total aah; while
only twenly-one (81) per oent of thoaa aoU aa jMori borlsy, yidd mm* tlum 1-10 per
oent of total wik. Theae figurea howerar, must be interpreted in eonneetion with tha
abore mentioned fact, that many of the san^lea are doubtfully true to name; in oAer
words, until we are able to distinguish ahaq^ beitween what is to be regarded as a
pot barley, and what aa a pearl barley, tha eonmncial nomenclature is too indefinite
frorpnrpoaei el defcatfm.

This report must be regarded mainly as a study of the subject, rather than as
furnishing material for departmental action. It may enable us to define Pot Barley
and Pearl Barley in such a way as to definitely distinguish tiiesc important articles of
food; and to estabUah legulationa whidt riiall guide in the iateapretation of worit dnoe
