M. WiNSLOW. With the rapidly increasing popularity of the Ayrshire Cow it seems unnecessary to enter into a detailed history of her origin and development, and we will confine ourselves to her claims for merit as a dairy cow. Milk. While the Ayrshire can fill any place in the dairy with credit to herself and profit to her owner, she is eminently the milk- man's cow, and in this capacity has no rival, as her medium size, vigorous appetite and easy keeping qualities make her an eco- nomical producer, while her even, uniform production makes her a reliable supply, and the richness of her milk in total solids places it above suspicion from city milk inspectors. Her milk is particularly adapted to transportation, as it does not churn or sour easily, and when poured back and forth a few times will readily mix the cream back into the milk, which will not again readily separate, giving it a uniform quality until the last is sold or used. It has a good body, is rich looking and never looks blue. The milk itself being evenly balanced with casein and but- ter fat is a complete food, easily digested, nutritious, and is par- ticularly adapted to children and invalids. Stomachs that are weak and unable to digest other milk, Und no trouble ivith Ayr- shire milk. It is a well-known fact that the oil in milk is the least val- uable as a food, and that milk that has a superabundance of oil is more indigestible than a milk that has a full supply of bone and muscle forming properties, and causes serious disorders in the digestive organs of young children. There is also a difference in the friability of the curds, that of the Ayrshire being easily disintegrated, while that of the many butter breeds is tough and leathery. I have frequently had letters from Jersey breeders wishing 22 to buy Ayrshire cows to raise their Jersey calves on Ayrshire milk on account of its great digestibility. This is not wholly due to the extra richness of the Jersey milk in butter fat, but is partly due to that cause, and partly to the above difference in the quality of the curds. Another valuable quality in the Ayrshire cow as a milk pro- ducer is her rugged health and freedom from disease of body or udder. It is a very rare thing to find an Ayrshire cow that has tuberculosis or any disease of the udder. To produce good wholesome milk it is important to have a sound, healthy body, free from all disease, and this the Ayrshire gets from her strong constitution and vigorous appetite, giving her a healthy body, with which to manufacture wholesome milk. Cream. Her milk is admirably adapted to the manufacture of sweet cream for table use, making a smooth cream that keeps well and is most delightful as a table cream, the globules being smaller, making it more easily digested and assimilated. Ayrshire cream is particularly adapted to the manufacture of a high grade of ice cream, the claim being made by manufac- turers that a quart of Ayrshire cream makes more in freezing than any other cream. Butter. The Ayrshire cow, being so admirably adapted by nature to supply milk and cream for the table, has almost always found her place in the supply stable near cities and towns, where high grade digestible milk is wanted, and it has been found more profitable to use the Ayrshire cow to produce a four per cent, market milk than to make it into butter. The Official tests show the average yield of the breed is over 4000 quarts of 4 per cent, milk from mature cows and heifers, which in itself makes her in too great demand for a milk producer to allow her going into a butter dairy to any great extent, although as a but- ter cow she takes a high rank as the following table will show. Longevity. Another unusual quality of the Ayrshire, among the dairy breeds, is her staying quality, in keeping up her milking tend- ency until long past the common age of milking. It is not an uncommon thing to find an Ayrshire doing her full work at from twelve to fifteen years of age, with a young looking mouth at sixteen to seventeen, and a perfect udder in health and strength long after the age which has ended the use- fulness of other cows. Beef. The ease and quickness of the Ayrshire cow to fatten when dry make her a profitable cow to turn into beef when her days of usefulness are over as a dairy cow. Her meat is red, her tal- low white, her hams large, her loins thick, her meat well flecked, her bones small, all of which make her most desirable for the butcher. For the production of veal there are no cattle equal to the Ayrshire because they grow rapidly, fatten quickly, weigh heavier than their looks would indicate, and butchers like them. Top Cross. As a top cross on other breeds the Ayrshire is a success in producing a more desirable dairy cow. With the Shorthorn they nick nicely, producing a fairly good dairy cow, in size between the two, and a handsome, attractive cow that sells well in the markets. With the Jersey they seem to make up what is lacking in the Jersey, and give a good, all-around dairy cow, larger and hardier than the pure-bred Jersey, giving more milk and of nearly as rich quality, and are said to be more profitable in the dairy than the pure-bred Jersey. Ayrshire bulls have for several years 25 been eagerly sought for to cross on unregistered or high-grade Jerseys in the common dairy. It is a noticeable fact that where Ayrshire bulls have been continuously used on common cows and heifers raised for the dair}^, the average receipts in dollars from such a herd have been considerably in excess of common dairies, so much so that in dairy sections where the milk or cream goes to the butter fac- tory, there is an active demand for pure-bred Ayrshire bulls to cross on native herds of cows. Official Tests. The steadily growing popularity of the Ayrshire cow with the dairyman who is looking for the highest profit to be obtained from his herd, and the gentleman farmer, who wishes to com- bine fancy farming with a dairy herd that will help pay the fancy expenses of the farm, places the Ayrshire in a most enviable position among the dairy breeds, and makes her an all-round, popular business cow, and of most beautiful and attractive ap- pearance. There has heretofore been a lack of concentrated effort in bringing out the merits of the Ayrshire cow but of late years a number of men of means have become attracted to her on ac- count of her beauty of form and hardy constitution, and the response she has made to good care and proper feeding is simply wonderful. The records speak for themselves. Her develop- ment is only in its infancy. Since the Experiment Stations throughout the United States have, in their experimental work, turned their attention to the skillful handling of niilk, the Ayrshire Breeders' Associa- tion have established a system of Advanced Registry Tests for the breed, carefully guarded at home against mistakes, and peri- odically inspected by the Experiment Station in the State where the herd is located. It is the belief of the Ayrshire Breeders' Association that while daily, weekly and monthly tests are interesting, in a way, they are misleading as to the real value of a cow, and the desire of the Association is to produce and make public the real profit derived from the cow in her normal condition, doing her regular dairy work of a breeding and dairy cow. A cow must be kept 26 the whole year at an expense, and whether or not she is a pay^ ing investment depends upon the receipts from her for the full time she is kept. She might be forced to a phenomenal yield for a week or a month, which if taken as the guide for the whole year would make her appear to be a very profitable cow, when, in reality, the short yields were no guide at all for the whole time, and no index as to the dairy profit received from the cow. The Ayrshire Breeders' Association has always been the leader in all advance movements in bringing the Ayrshire cow to the front in anything that would recommend her to the public. The Ayrshire Breeders' Association established the first Herd Book for the breed, instituted the first official testing for the breed, and was the first Record Association in America to endeavor to raise the standard of their breed by discriminating against the registration of bulls from ancestry without official records. We hold the unbeaten official record for the highest milk and butter record for any Ayrshire cow in the world. When the Association started the official testing, the 10,000 lb. Ayrshire cow Avas the phenomenal cow, but today a 10,000 lb. record attracts no attention because we have gone so far ahead of this record, and have produced cows with official records of 20,000 lbs. Better breeding, better feeding and better care are develop- ing the Ayrshire cow in her dairy points, and the Association by their, watchful care aided by the Experiment Stations are giving to the public numerous illustrations of what lies hidden in the breed. If the few years of official testing have brought out such marked results from herds where no one knew what kind of cows composed the herd, what will be the result when the ma- jority of Ayrshire breeders know to a certainty what is the in- dividual merit of every cow in the herd, and begin to breed in- telligently and for a definite purpose? Show Ring. The show ring being the medium of presenting the breed to the public for observation, has always attracted the attention of K S 28 the general public, for the efforts of breeders and the scale of points all coincide in producing a very handsome and attractive cow, one that at a glance shows indication of great dairy ability, and also is a beautiful cow to look at, To have the highest type of perfection in outward form, and the highest yield at the pail, calls into requisition the high- est skill of the breeder. The two should go together, and be united in one animal, for all the points that go to make a per- fect dairy cow as judged by scoring should be the points that bring out the highest productiveness at the pail. The small, lean, bony head, with a bright and lively eye, strong jaw, and broad muzzle are perfection in scoring, and just what is needed to excel at the pail. The well sprung rib, the large paunch, are both perfection in points, and what is needed to fill the pail. The larger udder capacity, the well spread teats, the four perfect quarters are what the points call perfection, and indi- cate the largest ability for production. The happy blend as you might call it of uniting the high type of the breed in conformation, with the high production as shown in the advanced registry testing, has in the last few years been made strikingly manifest at the leading shows in the coun- try in the display of Advanced Registry cows in the ring, and their ability to carry off the blue ribbons as show cows. It has proved that beauty of conformation and dairy ability are and can be, united in the same cow. Advanced Registry. In 1902 the Ayrshire Breeders' Association, feeling the need of authenticated records for quantity of milk and butter claimed by the breeders and owners of Ayrshire cows, established a record of merit, called the Advanced Registry, in which should be recorded the results of official tests made for a year on one milking period. ,Any member of the Association could have his herd tested by applying to the Secretary of the Association, who then sup- plied him with the necessary instruction and blanks needed for his part of the test, and arranged with the Experiment Station 29 of that State to inspect the herd each month during the year, and report the result to the Secretary. The methods adopted are calculated to insure reliable re- sults, and have thus far done wonders for the breed in verifying the supposed dairy ability of the Ayrshire cow. The beneficial results of the advanced registry testing, have been to show that the Ayrshire breed has remarkably uniform dair}^ ability, that she has been bred for a high quality of dairy excellence all along the line bred more for a general high stand- ard for the breed than for individual or family superiority. The testing has brought out the fact that no one Country or no one breeder can claim, for long at a time to be the leader, for the testing is continually bringing to the front, new cows, from new herds and new families, whose records place them in the lead. It shows that any breeder, from any section of the Country, with any line of family breeding may reasonably expect from the test to find he has a record breaker in his herd, that makes both the cow and his herd famous and adds to the popularity of the breed in general. The three 20,000 lb. cows that have qualified for advanced registry under our advanced registry testing, show the truth of the above claim for the Ayrshire cow. Jean Armour, a cow bred in Canada, from the old Canadian line of breeding, owned, and tested by Mrs. F. D. Erhardt, West Berlin, Vermont, came first, then Gerranton Dora 2d, bred in Scotland, imported, owned and tested by Mr. J. W. Clise, Seattle, Washington, took the lead, then came Lily of Willow- moor, an American bred cow, making the World's record with over 22,000 lbs. of milk and over 1000 lbs. of butter. The occasional large yields and high general average of the breed indicate that in a general way, good dairymen and careful breeders must have handled the Ayrshire cow for long genera- tions back, in whatever country she has been bred. It has also been proven that the Ayshire cow will respond to whatever treatment is bestowed upon her and will yield a dairy product just in proportion to her supply of raw material. In testing we have found many cows kept in normal condi- tion qualified with a creditable record for the food and care be- 30 stowed upon them, and too we have found the same cows when fed and cared for in a better manner, gave a correspondingly better record, and when fed and cared for systematically, and to obtain a high yield, they responded to the fullest extent, showing that there was a constitutional capacity in the Ayrshire cSw that made it possible to drive her as fast and as far as desired, with- out reaching the danger point. Not all the breeders can afford to make a display of their herd at the fairs, but all owners of Ayrshires should take ad- vantage of the opportunity of testing their cows, and learning which are the best in the herd and no breeder ckn afford not to find out the individuality of the cows standing in his stable. The demand today is for record cows, and for bulls from advanced registry cows. The public has been, and is being more and more educated to a higher standard of excellence in breeding stock. The day has gone by when all that was demanded was a registry certificate. The breeder today wants to know what the individual qualities are as well as what is back of his breeding stock The demand today is for the highest type of perfection, not only in the production of dairy product, but also in conforma- tion as laid down in the scale of points. To breed perfection in form and dairy ability, calls for the highest type of a breeder, not a haphazard breeder, not a one- sided breeder, not a careless breeder, but a natural born breeder, a man who can see in his mind's eye the future offspring, the result of his coupling. A man cannot breed understandingly unless he knows all about the animals that are back of his breeding stock on both sides. Bull. Too many men send away for a bull to head their herd, leaving it to the seller to make the selection, and too often the buyer gives the seller no intimation of the needs of his herd. The bull is half the herd, and it is very important to obtain such a bull as will overcome and remedy the defects in the cows of his herd, and whose calves will in the majority be an im- provement on the dams. Record: 1.3,261 lbs. milk, 449.66 lbs. fat, 530 lbs. butter, 3.39% fat 32 There is no cow or herd of cows that is absolutely perfect in either conformation, dairy production or disposition, and us- ually the same defect runs through the majority of the herd, es- pecially in the herd of an old breeder. A breeder wishing to improve his herd, and seeing accounts of \vonderful production in some herd or herds writes for a bull and buys one on the dairy record of the dam, without knowing more of his ancestry than the fact of high dairy production. This bull might be the worst bull possible to place at the head of his herd, because it might be that the cows in both herds had the same defects and he only intensified the defects of his own herd, while another bull from another herd would have balanced up his herd in curing their defects. Too many of our unshapely cows come from just this method of careless breeding, the mating of the same defects found in the breeding of both bull and cows. This same bull might have gone into some other herd and done good work because the cows did not have the same defects that were in him. The highest perfection cannot be obtained by any breeder until he exercises the utmost care in the choice of a bull to head his herd. The right bull will do wonders in im- ])roving a herd, and the wrong bull will almost ruin a herd. There has of late been a strong effort made by the Ayrshire Breeders' Association to as far as possible insure the importa- tion of a high class of dairy Ayrshires. This has been done by placing a high record fee on all imported bulls whose dam or paternal grand dam cannot show a high official record for milk and butter fat. The increased revenue to the Association is helpful, but that is only secondary to the great benefit to the breed in general from its encouraging the importation and registry of a high class of dairy bulls. It holds to reason that a bull that has a high official record back of him must of necessity be from a good dairy cow, a cow that not only gives a large quantity, but presumably a cow with good teats, and also with a strong con- stitution. Why? Because if she had not a strong constitution she could not give the necessary quantity of milk, and again, if she gave that large quantity and had unmilkable teats, she would of 33 course be discarded from the dairy so the high fee is a sort of a guarantee in itself that helps the purchaser of an imported bull, whereas if there was no restriction placed on imported bulls, it would be an easy matter to bring over a class of bulls that would be a great damage to the breed. Usually only one bull is kept for service in a herd, and be- fore his progeny can endorse him, there has been time enough passed to injure the herd iniinitely more than all the purchase price of the bull, record fees and all, for it will take years to undo his work, and start right. You cannot throw too many safeguards around the selection of a herd bull. 34 ADVANCED REGISTRY. A complete list of all cows and heifers that have qualified for advanced registry to March 1, 1913.
